L'Incanto's cuisine: traditional Amalfi Coast fare, using fresh, seasonal ingredients

The cuisine at L’Incanto is rooted in a respect for the culinary traditions of Positano and for local produce.

Every day, the fresh catch from the Gulf of Salerno, seasonal vegetables and ingredients selected from local suppliers are transformed into Mediterranean dishes served with a view of the sea.

Not trendy cuisine, but authentic cuisine: the kind of food eaten in Positano fifty years ago, cooked with the care it deserves.

Fresh fish from the Gulf every day

Seafood forms the backbone of the menu.
Every morning, the chef selects fresh fish arriving from the Gulf of Salerno and from local catches: anchovies, sea bass, sea bream, octopus, prawns and sea urchins. Seafood starters, spaghetti with clams, light fried dishes, and main courses grilled or baked with aromatic herbs from the Mediterranean scrub.

The menu varies according to the availability of the catch, to always guarantee maximum freshness.

Homemade pasta and traditional Campania first courses

The first courses follow the traditions of Campania: fresh handmade pasta, potato gnocchi, and scialatielli – the typical pasta shape of the Amalfi Coast – served with seafood sauces or with Piennolo tomatoes from Vesuvius.

Simple ingredients, prepared with skill and respect for the raw ingredients.

Pizzeria in Positano: naturally leavened dough, wood-fired

L’Incanto is also a pizzeria. The dough is made with 100% Italian stone-ground soft wheat flour and is left to rise naturally using sourdough starter.

The result is a light and easily digestible pizza, crispy on the outside and soft on the inside, cooked in a wood-fired oven.

The ingredients are selected by the master pizza chef with the same care given to the restaurant’s other dishes: mozzarella from Campania, San Marzano tomatoes, and fresh basil.

Dining with a view of the sea at Positano

Dining at L’Incanto is not just about enjoying good food: it’s about sitting just a few metres from the sea on Spiaggia Grande, with views of the Li Galli archipelago and the colours of the Amalfi Coast.

The waiting staff, who are also trained in English, attend to every guest with discretion and care from the moment they are welcomed until the end of their meal.
